The reason why you need to downgrade macOS Sierra just varies. You may want to give up testing the latest system because of the problematic experience with the new OS release. Or you'll have to downgrade back to OS X EI Captian since you found the macOS 10.12 is incompatible with other important software on your Mac. No matter what reason it is, downgrading from macOS Sierra back to Mac OS X El Capitan is quite simple with just a few steps only. Now you can follow the steps here to get back from macOS 10.12 to your old setup in no time.
* You can't boot your Mac into Recovery mode and revert to El Capitan because this method can only be used for reinstalling the system that's currently on the Mac, which in this case is Mac OS Sierra.

* You can't run the El Capitan installer within macOS Sierra, because the Mac always wants to have the latest version of macOS.
* To begin with, make sure you have a Time Machine backup for all your files so that you can restore all your data by the end of the reinstallation process from Settings ->Time Machine.
Step 1. Create a bootable drive of OS X El Capitan
Before you erase macOS Sierra from your computer, you need to download OS X El Capitan from the Mac App Store. For this purpose you'll need a bootable flash drive (USB) with El Capitan on it. The following steps will show you how to create such a bootable EI Capitan installer drive.
1. Find an external drive (a thumb drive will do) with at least 8GB of storage space.
2. Download El Capitan installer file from the Mac App Store and put it into the Applications folder.
3. Open Terminal and paste this into Terminal window: sudo /Applications/Install OS X El Capitan.app/Contents/Resources/createinstallmedia --volume /Volumes/Untitled --applicationpath /Applications/Install OS X El Capitan.app --nointeraction.
4. Enter admin password if it asks.
It will take you approximately half an hour before it's completed. In the end, you will see: Copy Complete.
Step 2. Erase macOS Sierra
Now the following guide shows you the easiest way to completely remove macOS Sierra from your Mac.
1. Connect your Mac to the Internet via Wi-Fi or Ethernet.
2. Restart your Mac.
3. Hold down Command+R when you hear the startup chime and keep holding the keys until your computer reboots.
4. Click on Disk Utility in the OS X Utilities selector.
5. Click Continue.
6. Select your Startup Disk. Click on the Erase tab at the top of the window.
7. Choose Mac OS Extended (Journaled) from the list. And hit Erase.
When the process completes, quit Disk Utility from the dropdown menu in the upper left corner of the screen to go back to the OS X Utilities selector.
Step 3. Reinstall OS X El Capitan 10.11 back on your Mac
Now it's time to install the earlier OS X 10.11 back to your Mac.
1. Click on Reinstall OS X in the OS X Utilities selector.
2. When you see El Capitan installation, just click Continue and then click through the license agreement.
3. Follow the usual installation flow. Let it finish and reboot.
Note: Depending on how old your Mac is, you may download an older version of OS X, possibly the one that originally shipped with your computer. If that happens, finish the installation and then go to the Mac App Store to upgrade to El Capitan.
Step 4. Retrieve your data from El Capitan Time machine backup
1. Restart your Mac. Press and keep Command+R through the whole reboot.
2. Select Restore from Time Machine Backup in the OS X Utilities selector.
3. Click Continue (twice).
4. Select the Backup source for where your Time Machine backup is stored and click Continue.
5. Select OS X El Capitan backup on the drive (the most recent one). Click Continue.
Your Mac will begin restoring from the Time Machine backup and then reboot. It will take a while. The average restoring time mainly depends on the size of your backup.

If a Mac shipped new with 10.11 it can be updated to 10.14 Mojave direct from the Mac App Store.
If it is not running 10.12 yet, but was prebundled with 10.11, it can be upgraded to 10.12 first, then upgraded to Catalina.
Backup your data first.
Go to Apple menu -> System Preferences -> Date and Time and select the closest time server to set your time, and do so. Download based on manual time may fail, especially on older systems where the system time is not set right.
Note, some downloads from Apple do not work in Safari for earlier Mac OSes, see this tip if you find you can't download them anymore, to find a browser that will work. Additionally the certificates may make a download appear not available.

Some downloads may error out because of date. This thread discusses how to force the date:
If a Mac is already running 10.12, and it is older than 10.12, you must format a separate GUID HFS Plus partition to install 10.11 or earlier on it. The reasoning is starting with High Sierra HFS Plus is automatically formatted on SSD and thumb drives.
If a Mac has 10.8 on it, it can be upgraded to 10.13 High Sierra if it doesn't meet 10.14's requirements but does 10.13's.
If a Mac has 10.7.5 or later on it, it can be updated to 10.12 Sierra if it meets 10.12's system requirements. 10.12's availability just became known to the author of this tip on October 1, 2018.

September 17, 2018, Apple released iOS 12. Synchronizing with it needs El Capitan or newer on a Mac.
El Capitan is only available to those who downloaded it before, or have 10.6.8 installed. Sierra is available to
those with preloaded 10.7 or later Macs. Either one can be installed on its own partition to allow compatibility with older apps while synchronizing iTunes with iOS 12.

There has been limited success installing 10.11 directly onto 10.8.5.
Note: The 6 GB file takes approximately 37 minutes at 25 Mbps. After
which point you'll have to check through the license agreement and then it will proceed with the installation of about 24 minutes. That 24 minute installation may be longer depending on the capacity and memory support of your system, and should not be regarded as an exact time. If it takes longer than 2 hours in the 24 minute process, feel free to post on the forum to ask if there is something that might have been overlooked.

Don't just consider the table having a green circle saying that it is compatible as people have been testing with pre-release versions of 10.11, and may have reported it in there. The only release version of 10.11 tests could have been performed on 9/30/2015 or later.
There are some known issues with Microsoft Office that they have listed on their knowledgebase and they have issued 14.5.6 & 14.5.7 of Office 2011 to address these.

10.11.2 patches some issues with 10.11 and automatic document feeder scanning from the Canon Pixma MX922, and may help other scanners that no longer had their Image Capture interface for the document feeder.
Also found with another copy of 10.11.2, was the Canon MX922 was automatically recognized on launch, and with waiting for the dialog, it was able to locate the right drivers to download automatically.
